Shakshuka

  • 1 onion
  • 3 garlic cloves
  • 1 green pepper
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper
  • 5 medium tomatoes
  • 1 teaspoon harissa paste
  • 4–6 eggs

    Finely chop the onion, garlic and green pepper. Sauté them in olive oil in a deep frying pan together with the spices. Season with salt and pepper, and cook until softened and fragrant.

    Chop the tomatoes finely and add them to the pan, along with the harissa. Cover and simmer gently for 10–15 minutes until the tomatoes collapse into a sauce.

    Use a spoon to make small wells in the mixture and crack in 4 to 6 eggs.

    Cook over a low heat until the whites are just set while the yolks remain beautifully runny. Serve immediately, ideally with warm crusty bread.
