Celery Salad

  • 1 large bunch of celery
  • 1 large sweet–tart apple
  • 200 g couscous
  • A handful of shelled, unsalted pistachios
  • 150 g pomegranate seeds
  • 1 small bunch parsley
  • 1 small bunch mint
  • Juice of 1 lemon
  • 4 tablespoons olive oil
  • Honey, to taste
  • ½ red chilli, salt & pepper

    Begin by preparing the couscous: place in a bowl or saucepan and season it lightly. Pour over boiling water (1 part couscous to 2 parts water), then cover with a lid and leave to steam for 15 minutes.

    Finely slice the celery. Cut the apple into thin matchstick- like strips. Combine the celery and apple with the couscous, pistachios and pomegranate seeds.

    Add the finely chopped parsley and mint. Season with salt and pepper, then dress with the lemon juice and olive oil. Sweeten lightly with honey to taste.

    Halve the chilli, remove the seeds and chop it finely. Add as much as feels comfortable for your preferred level of heat.
