Fig, Red Onion & Burrata Tart

  • 3 red onions
  • Thyme
  • 1½ tablespoons sugar
  • A generous pinch of salt
  • Olive oil
  • 1 sheet puff pastry
  • 7 figs
  • 2 small balls of burrata
  • 1 bunch basil

    Slice the red onions into half-moons and gently sauté them in olive oil with thyme, sugar and salt until soft and lightly caramelised. Slice the figs horizontally into three rounds each.

    Roll out the puff pastry and lay it in a medium-sized ovenproof baking dish or tart tin. Spread the caramelised onions evenly over the base and bake for 20 minutes at 200°C.

    Remove the tart from the oven, arrange the fig slices decoratively on top and then bake for a further 20 minutes at 190°C.

    Take the tart out, finish with fresh basil leaves and torn burrata, letting it melt slightly on the warm pastry.
