Homemade Granola

  • 100 g hazelnuts
  • 50 g pecans, 50 g cashews
  • 20 g coconut flakes
  • 50 g rolled oats
  • 3 tablespoons runny honey
  • 1 tablespoon melted coconut oil
  • 1 teaspoon each: ground cinnamon, cardamom
  • 1 teaspoon vanilla extract
  • 3 pinches of salt

    Preheat the oven to 150°C and line a baking tray with baking paper.

    Pulse the nuts in a blender for about 30 seconds — just enough to break them into coarse pieces. Tip them into a large bowl, add the coconut flakes, oats and all remaining ingredients, then mix thoroughly until everything is lightly coated.

    Spread the mixture evenly over the tray and bake for 20 minutes. Give it a quick stir, then return it to the oven for a further 15 minutes until golden and fragrant.

    Allow to cool completely and store in an airtight glass jar. Serve with fresh strawberries (or any fruit you fancy) and a generous spoonful of yoghurt.
