Rhubarb Crumble

  • 6 rhubarb stalks
  • A little water
  • 200 g sugar (or to taste)
  • 100 g butter
  • 200 g flour
  • 100 g sugar
  • 1 teaspoon cinnamon

    Cut the rhubarb into 2–3 pieces. Sprinkle them with sugar to taste, add a small splash of water and bake for 20 minutes at 180°C.

    Cut the butter into small cubes and rub it into the flour with your fingertips until it forms coarse crumbs. Mix in the sugar and cinnamon.

    Scatter this mixture evenly over the softened rhubarb and return to the oven for a further 35 minutes, until the crumble is beautifully golden and crisp.

    Serve warm with custard, sour cream or whipped cream.
