Roasted Sea Bass

  • 2 small cleaned sea bass (or sea bream or turbot)
  • 2 red onions
  • 2 large beef tomatoes
  • 1 whole garlic bulb
  • 1 red pepper
  • 1 fennel bulb, optional
  • 100 g pitted Kalamata olives
  • 50 g capers
  • Several sprigs of thyme
  • Salt and pepper
  • Olive oil

    Place the fish in the centre of a large baking dish. Season well, drizzle generously with olive oil and top with the thyme sprigs.

    Cut the vegetables into large rustic pieces and arrange them around the fish, along with the olives and capers. Season again and finish with another drizzle of olive oil.

    Bake at 200°C in a fan oven for 18–25 minutes. When done, the vegetables will be tender and the fish will begin to gently flake apart.

    Serve warm, spooning the fragrant roasted vegetables over the fish.
